    Cultivation of Vanilla

    Vanilla is the fruit of an orchid that grows in vines in most tropical regions of the world.

    The vanilla plant requires love and time... it only begins to bloom after 3 years. Its fragile flowers open slowly every morning, for only a few hours. They must be pollinated at dawn and by hand. This requires patience, precision, and expertise from the "matchmakers": the poetic name given to the women who perform this delicate operation.

    It will then take 6 to 8 months for the flower to transform into a mature pod and be ready for harvest. Next comes the preparation stage...

    "Gourmet" vanilla represents less than 10% of the annual production. These are perfectly mature, unsplit pods, carefully inspected and selected one by one, by hand.

    Depending on their origin, the method of preparing the pods varies, giving each origin a unique aromatic profile.

    This work requires expertise that only local preparers possess. After olfactory checks and meticulous calibration of the vanilla pods, they are bundled together before heading to the finest dining tables around the world.
